You too can have wings! I have created a great, simple recipe along with some tofu tips. Keep reading—To start grab a block of Nasoya firm or extra firm tofu.
Pat dry very well and gently cut into cubes. Line a baking tray with foil, spray a little non-stick spray and lay cubes onto tray. Season cubes lightly with a bit of sea salt and a shake or two of pepper.
Stick in the oven at 425 and after 10 minutes flip them. Flip four times, leaving less time in between each flip.
Take out of the oven, grab your bottle of Saucy Mama Hot Wing sauce
(NOM NOM NOM) and put your cubes in a bowl. Chop up some scallions and toss those on top if you have them. Coat with sauce. Simple and delicious. Try it!

New Pudding Creation
I whipped up this fabulous pudding the other day when I was looking for a sweet snack. It turned out so good!! Here we go:
1 box of tofu (any firmness will do-- if you use a firm tofu you will need a bit more Hempmilk to get it going)
Vanilla (Unsweetened) Hempmilk as needed (gives a great flavor too)
2 Tbs. Hershey's Dark Chocolate Cocoa Powder
Ideal Sweetener*
Put all items in blender and blend away-- add more Hempmilk as needed until pudding like consistency is reached.
*I hate putting how much sweetener to use in recipes because I like things super sweet and I have noticed that what is good to me, is too sweet to others when I prepare it... So sweeten as needed. I used Ideal which is new to me. It is a no calorie sweetener this is 99% natural (Xylitol). It is great because it tastes just like sugar and has no aftertaste, it also dissolves quickly. Researching it a bit I found out that it is unreal in baked goods and really holds it sweetness and adds to the volume/ texture of the dish you are making, next time I bake I will be trying this out!

Low Carb Meatless Spaghetti Dish
2 packages Shiraki Noodles
1 small can No Salt Added Tomato Sauce
1 shallot or onion (I used Melissa's brand)
Handful of mushrooms
Galaxy grated Parmesan topping (YUM!)
Boil noodles for about 5 minutes, rinse, pat dry and set aside. Saute the shallot* with the mushrooms, then add sauce. Let simmer and season. Add the noodles to the pan and let it get hot with the lid on stirring frequently.Top with Galaxy Foods grated Parmesan topping (2 tsps only 15 calories).
*As a member of the onion family, Melissa’s French Shallots are tender intexture, mild in flavor (less pungent than the onion), and quick-cooking. (From Melissa's website)

Peanut -Thai Inspired Noodles!
Yum! Anything with a hint of peanut butter is good! For this dish you will only need a few products then add away with just about any veggies. First off, prepare your noodles. I generally use Shiraki noodles but some people use a high fiber noodle, wheat noodle or miracle noodles. Just about anything will work for this dish! Then make your peanuty sauce:
4 tablespoons Bragg's Liquid Aminos or Low-Sodium soy sauce of choice
1 tablespoon melted peanut butter or PB2 reconsituted in a dab of water
1 packet sweetner of choice
MIX! I added some broccoli and scallions but whatever you want to add would work great. If I had some spouts I would have tossed those in. Next time I will be adding tofu to my peanuty goodness.

Faux Alfredo
This entire recipe has about 150 calories!

1 Serving of your favorite veggie (I use either spinach or broc florets for this)
